EGGLESS OATMEAL COOKIES



Ingredients: 
 Flour ( I use whole wheat flour ) 1cup + enough for dusting  
Corn flour powder 1 to 2 tbsp Oatmeal ( instant ) 1 cup + more if you like 
Sugar powdered 2/3 cup 
Flax seed powder 2 tbsp ( optional ) 
Salt a pinch 
Baking soda 1 tsp
 Raisin 1/2 cup 
 Butter 100gms ( at room temp ) 
Cinnamon powder 1tbsp 
 Milk/ water aa1tbsp ( if reqd )
  1. Preheat the oven to 170ºc. 
  2. Cream the butter and sugar keep aside. 
  3. Now in a large bowl sieve and combine wheat flour and corn flour with salt. 
  4. Now add flax seed powder, cinnamon powder, oats, and baking soda mix well till combined. 
  5. Add creamed butter and sugar along with raisins.
  6.  Combine well if the batter is too dry and doesnt form into a soft ball then add 1tbsp milk/water. If the batter is too sticky add more flour and oats. 
  7. Now divide and make 20 small balls. 
  8. Place them in a baking tray little apart from each other so that your cookie can bake and double in size. 
  9. Now before putting them in oven press them a little to resemble cutlets or fat biscut. 
  10. Now bake at 170ºc prehated oven for 20 mins. 
  11. Leave in the oven for 5 mins to rest after its cooked. 
  12. Remove from oven and cool it a little and remove the cookie and place on a broad plate let them cool. Store them in air tight container. Keeps for a week.
